James Suckling 94 Points: “A dense Champagne with a tight and linear structure. Compressed and very pretty. Hints of nuts and cream with some pie crust. Some nougat, too. Very long and flavorful. It’s one for a meal. One-third of Pinot Meunier, Pinot Noir, and Chardonnay. Fermented and aged in barrel for about six months. It’s aged six years on lees. Drink or hold.”
Wine Spectator 93 Points: “Flavors of baked pineapple, chopped black cherry, grilled nut, and pickled ginger expand on the palate of this expressive Champagne backed by a firm spine of integrated acidity. Fine like raw silk on the palate, and the lightly mouthwatering finish carries accents of lime blossom, chalk, and oyster shell. Pinot Noir, Pinot Meunier and Chardonnay. Drink now through 2026
Robert Parker 92+ Points: “The latest release of Billecart’s NV Brut Sous Bois is excellent, unwinding in the glass with notes of lemon oil, crisp stone fruit, buttery pastry and freshly baked bread. Medium to full-bodied, fleshy and elegantly vinous, with chalky phenolic structure and an enlivening pillowy mousse, it’s impressively deep and concentrated, with fine tension and grip. Early renditions of this cuvée tended to be at their best on release, but this impressive effort appears to be built to age.”
Vinous 92 Points: “(made from one-third each Chardonnay, Pinot Noir, and Pinot Meunier; 6 g/l dosage; L359333 15056M): Bright yellow. Pungent orchard fruit and lemon curd scents are complemented by suggestions of vanilla, anise and smoky minerals. Toasty and silky in texture, offering juicy pear and tangerine flavors plus a deeper suggestion of candied fig on the back half. Closes sappy, focused and long, with repeating smokiness and strong mineral cut.”
Winery Notes: “The Brut Sous Bois offers a complex aromatic definition and a character linked to vinification in oak casks. A radiant yellow crystalline appearance with golden glints brought to life by a luminous stream of persistent, fine bubbles. There is a rich olfactory impact which is harmoniously expressed (dried fruits, fresh citrus and white flesh fruits) and coupled with finely buttered seductive notes. A burst of flavors (notes of grilled brioche and toffee) thanks to the distinguished power and maturity which is a mark of any great wine of Champagne.”
